Blueberry Billy Can Pudding

Usually when we are cooking we like something quick and easy but if you have the time on a bit of a longer trip it can be fun to spend a bit of time on something a little special. In all honesty this one is easy it, it just requires a bit of time fire gazing which is one of our favourite activities.


Serves 5 prep time six hours, cook time 3 hours (don't freak out most of that time is sitting doing nothing at all.)

You'll need

  • 1 cup plain flour (for GF version we used 50% coconut flour and 50% tapioca flour)

  • 1/2 tsp bicarbonate of soda

  • 1/2 tsp mixed spice

  • 1/4 tsp cinnamon

  • 100gms dried blueberries (or dried fruit of choice)

  • 1/2 cup coconut sugar

  • 500ml hot black tea

  • 1 ripe mashed banana

  • Maple syrup to serve



Method

  • Mash Bannana

  • Mix all the dry ingredients, try to get the lumps out but you know, we are camping so it can be a bit rough

  • Add the wet ingredients, mix well (don't stress if it looks a bit runny it will thicken up while it sits)

  • Butter a billy can

  • Pour mixture into billy can and set aside for 6 hours, or over night or prep it before you go camping what ever works for you

  • Prep your fire and pop the camp oven on, we used a tripod just so it was easy to keep the fire up to it for the three hour cook time

  • Fill the camp oven with water until the billy just kind of bobs around in the bubbling water, the water might need topping up occasionally, you don't want the billy resting completely on the bottom of the camp oven

  • Simmer for three hours or until it looks done

  • Serve with a drizzle of maple syrup
