Super Simple Camp Cookie Dough
If you have ever thought baking was beyond the limits of a camp oven think again! We love a treat but we also have a camp crew of various dietary requirements and we don't like letting anyone miss out. So we experimented finding a recipe that didn't rely on precision cooking that catered for everyone and it is even on the healthy side, what a win!
These are a soft warm dough ball type cookie best eaten as soon as they have cooled enough.
Ingredient list -
1 can chickpeas
2 teaspoons vanilla extract
1/2 cup natural peanut butter (if you feel like being healthy, otherwise any old peanut butter will do)
1/4 cup maple syrup
1 teaspoon baking powder
A pinch of salt
Chocolate chips to taste (we happened to use vegan ones but it is up to you)
Now for the camp fire method. Honestly we are all about the meal prep these days, yep you can make this from scratch in the bush and just mash the chickpeas with a fork. The only issue there is you have to lug all the individual ingredients. We made this dough ahead of the trip by just throwing all the ingredients sans the chocolate chips into a blender for 30 seconds to 1 min.
That way on the day we just had to ball them up and whack them in. (Pro tip, this dough is sticky as, so wet your fingers between balls)
We then set up a camp oven on a stand with little to no heat under it and a medium amount on top. As we all know with camp fire cooking, it is just done when it's done, we'd say check them at the 20min mark but to be honest we never really time it. These don't rise much, if at all, so don't worry about letting the heat out, check them as often as you need.
Perfect with a cuppa around the fire. Unfortunately for Fred they are not doggo friendly, they are however GF, Vegan, refined sugar free and packed with protein.
